An Okazaki brewery whose Nito label turns a proverb about chasing two hares on its head.
Maruishi Jozo has brewed in Okazaki, Aichi, since 1690. In December 2015 the kura launched a new label, Nito, built around a deliberately paradoxical idea: the proverb "chase two hares and you'll catch neither" turned on its head, aiming to balance two seemingly opposed qualities in each bottle for the best possible flavor. Nito was created in part to introduce Maruishi's sake to drinkers beyond Aichi prefecture. The brewery also runs its own directly operated shop, Jouan.
