A Meiji-era-adjacent house in Nagoya's Moriyama ward, still hand-crafting koji and yamahai sake 160 years after its 'Tatsuta-ya' beginnings.
Toharu Shuzo was founded in 1865 by Tobei Sato under the shop name 'Tatsuta-ya' in Moriyama, Nagoya. The brewery and its flagship brand, Azumaryu ('East Dragon'), take their name from the founder's given name 'Azuma' and the shop's 'Ryu' (dragon). More than a century and a half later, the kura still practices yamahai fermentation and hand-made koji, holding to older methods of brewing.
