In Tokoname on the Chita Peninsula, cold winds off Mount Ibuki have shaped Hakurou's brewing since 1848.
Sawada Shuzo was founded in 1848 by Gihei Sawada in Tokoname, on Aichi's Chita Peninsula, and has brewed there ever since under the biting seasonal wind known as Ibuki-oroshi, using techniques passed down largely unchanged. The house sees itself as part of daily life on the peninsula, brewing sake under the Hakurou name that reflects the local climate and water. Beyond sake, the brewery also makes a plum liqueur, Hakurou-ume, using sake rather than the more common shochu as its base.
