A Shitara kura in the Oku-Mikawa mountains, whose 'Ku' label is famously hard to find nationwide.
Sekiya Jozo brews Houraisen in Shitara, a town set deep in the forested Oku-Mikawa mountains of Aichi. The lineup moves from Wa, an easy-drinking junmai ginjo for the table, up through Gin, the kura's standard-bearer, to Ku, a junmai daiginjo so sought-after it has become nationally famous for being hard to find. Visitors can see the process firsthand at the brewery's Ginjo Kobo studio, which offers hands-on brewing experiences tied to the terroir of Oku-Mikawa.
