In Akita's Araya district, a 1930 kura still ferments in its original earthen-walled brewhouse, with yeast that lives in the walls.
Akita Shuzo has stood in the Araya district of Akita City since 1930, brewing in the same earthen-walled (dozo-zukuri) fermentation hall it opened with. Rather than pitching commercial yeast, the house relies on ie-tsuki kobo — wild yeast strains that have taken up residence in the kura itself over the decades. The resulting flagship, Suirakuten, has drawn gold medals at both the International Wine Challenge and Japan's National New Sake Awards.
