Asamai Shuzo was founded in 1917 in the Hiraka district of Yokote, Akita, and has built its identity around a strict local rule: every grain of rice and every drop of water must come from within five kilometers of the brewery. Its Amanoto label is meant to mirror the character of the Yokote-Hiraka basin itself, drawing on the region's clean groundwater. Sake fans across Japan have come to prize Amanoto precisely for that hyper-local discipline, tasting a single place rather than a blended idea of Akita.
