Brewing since 1487, in the last years of the Muromachi era, at the foot of Mt. Chokai.
Hiraizumi Honpo has brewed in Nikaho, Akita, since 1487, deep in the Muromachi period, making it one of Japan's oldest continuously operating sake houses. The small brewery sits where the slopes of sacred Mt. Chokai meet the Sea of Japan, and draws on the mountain's groundwater for its sake. Its Yamahai Junmai Daiginjo Maruhi uses Momotari rice milled to 50%, while its Junmai Daiginjo Keyakigura, milled to a striking 35%, ferments with the house's own Hamaya yeast. Since 2018 the brewery has closed its doors to individual tours to protect the microbial cultures that give its sake character.
