Kodama Jozo has brewed in Iitagawa, Katagami, Akita since 1828, growing into a broader fermentation house that also makes miso and soy sauce alongside its sake. Its flagship, Taiheizan, has won gold repeatedly at the National New Sake Awards and remains one of Akita's best-known labels. The range spans Tenko, a junmai daiginjo, Chogetsu, a junmai ginjo, and a kimoto junmai brewed by the slow, traditional lactic-starter method.
