Fudo and Jinyu — unfiltered brewing philosophy from a 1689 house in Kozaki.
Nabedana was founded in 1689 in Kozaki, a small brewing town in northern Chiba. Its Jinyu label comes from the family precept; Fudo was created in 2004 around a concept of letting rice and fermentation speak — no carbon filtration, and pasteurised sakes are heated only once, at bottling. The head brewer has led the kura for 26 years, and the annual Jinyu Kura Matsuri festival (its 28th in 2026) draws crowds to the town. Tours by reservation.
