At the foot of western Japan's highest peak, a family brewery built around 'sake that lives with food.'
Ishizuchi Shuzo has brewed since 1920 at the base of Mt. Ishizuchi, the highest peak in western Japan, in Saijo, Ehime. The brewery draws on ultra-soft water from the mountain's water system and keeps brewing centered on the family itself, working mostly in junmai and junmai ginjo styles under the guiding idea of 'sake that lives alongside food.' Its Daiginjo Taiyuho took first place nationally at the 2003 National Sake Competition, while its Junmai Daiginjo Ishizuchi Masamune represents the brewery's founding style, brewed today much as it always has been.
