A 300-koku family brewery in Yawatahama that still hand-controls water absorption, koji trays and traditional basket pressing.
Founded in 1899 in Yawatahama, on Ehime's Uwajima coast, Kawakame Shuzo takes its name partly from a local place name (川舞) and partly from founder Ninomiya Kamesaburo's own name. The brewery keeps production deliberately small — only what its hands can manage — using techniques such as limited water absorption, koji cultivated on wooden trays, and basket pressing (fune). Spring water drawn from beneath the Gotanda River, which flows past the kura, goes into every batch. All of its rice is brewery-grade sake rice, and the house continues to experiment with yamahai fermentation and its own house yeast strains.
