A Toon kura whose sake is named for Gogoshima, an island nicknamed 'the little Fuji of Iyo.'
Shimada Shuzo has brewed in Toon, Ehime since 1910. Its sake, Kofuji, takes its name from the view of Gogoshima, an island off the coast of Matsuyama known locally as 'Iyo no Kofuji' — the little Fuji of Iyo — for its cone-shaped silhouette. The kura's core release is a honjozo, brewed with a small addition of distilled alcohol for a lighter, cleaner profile than pure junmai, and it keeps its range tightly focused around this single label.
