A Matsumae brewery whose name means "sake shop" — but has quietly brewed since 1862 under the banner of a samurai's pure heart.
Despite its name — "saketen," or sake shop — Takechi has brewed its own sake since 1862, and is a registered member of the Ehime Sake Brewers Association. Its label, Bushigokoro ("Samurai Heart"), honors Kato Yoshiaki, the first lord of Matsuyama Castle, who was based at the old Masaki (Shomatsu) Castle some four centuries ago; the name evokes the purity of a samurai's heart. The house brews a Junmai Ginjo built to draw out rice umami and a smooth, clean-finishing Daiginjo, though it does not offer brewery tours.
