Since 1831, an Imabari brewery built on Ochi toji craft, Ehime rice and clean groundwater.
Yagi Shuzobu has brewed in Imabari since 1831, relying on quality Ehime-grown sake rice, clear Imabari groundwater, and techniques passed down through the Ochi toji (master brewer) brewing tradition. Its Yamatan Masamune label is built to be clean and gentle rather than assertive, meant to sit alongside local food rather than dominate it, a house style that has kept it a favorite in Imabari for generations. The range spans a delicately dripped Junmai Daiginjo, milled to 35%, to a Junmai Daiginjo built from Matsuyama Miyuki rice at 50%.
