An Aizubange brewery chasing balance in its Tenmei label, from strict temperature control to a house-made yogurt liqueur.
Founded in 1904, Akebono Shuzo is run by sixth-generation brewer Koichi Suzuki under the motto that "the joy of making sake and the joy of drinking it are both boundless." Its flagship Tenmei label seeks a balance of umami, sweetness and acidity that pairs well with food, backed by careful temperature and storage management. The brewery has also branched into a yogurt liqueur series called Snowdrop, developed with a local dairy. Retail sales and brewery tours are not currently offered.
