An Aizu junmai specialist built on 'do-san-do-ho' — using only local rice, water and technique — where 95% of production is pure-rice sake.
Founded in 1875 in Aizuwakamatsu, Takahashi Shosaku Shuzo brews under the principle of do-san-do-ho — using only local rice, water and craft. Junmai sake makes up 95% of its output, much of it from Gohyakumangoku rice grown pesticide-free in the brewery's own paddies. In the late 2010s it launched the Jo series, a set of labels that express the individual character of each rice paddy, one field per sake. The brewery does not offer public tours.
