The Story of 男山酒造店

Otokoyama Shuzoten has brewed in Aizumisato, in Japan's snow country, since 1865, once producing as much as 360,000 liters a year at its peak. When the brewery's toji (master brewer) fell ill, production stopped in 1998 and the kura sat dormant for roughly two decades. Kobayashi, a nephew of the previous head, left his career in IT to bring it back, training at other breweries and through the Fukushima Sake Brewing Academy before resuming brewing in 2020. The revived sake won recognition at the National New Sake Awards in its very first year back, made with Fukushima-grown rice varieties including Fukunohana, Yumenokaori and Tennotsubu.
