Founded in 1839 in Hida Takayama, Kawajiri Shuzojo is a small, individually run brewery specializing in old-fashioned, hand-crafted brewing in small batches, with an emphasis on sake matured for several years. It uses only Hida Homare, a sake rice grown locally, and holds to traditional methods — a cast-iron kama, a koshiki steamer and fune-shibori trough pressing — across every label it makes.
