Snowmelt that travelled thirty years underground, brewed in Yuki since 1867.
Buyu was founded in 1867 in the silk town of Yuki, Ibaraki. Its brewing water is subsoil water of the Kinugawa system — snowmelt from the Nikko range said to filter naturally underground for some thirty years before reaching the kura's wells. With select rice such as Yamada Nishiki, Gohyakumangoku and Omachi and a three-season brewing calendar (September to April), the house holds its quality steady. Tours are designed to let visitors take in the sake with all five senses.
