A 1782 brewery in Makabe, Ibaraki's only nationally preserved castle town, using Mt. Tsukuba spring water.
Nishioka Honten has brewed Hananoi since 1782 in Makabe, a district of Sakuragawa city that holds Ibaraki's only nationally designated Preservation District for Groups of Traditional Buildings — a castle town whose streets trace back to the Kamakura era. Water comes from spring sources beneath Mt. Tsukuba, and the brewery collaborates with the local Makabe High School, whose students grow the Yamada Nishiki used in one of its junmai daiginjo. Nishioka also belongs to a group of breweries working toward all-junmai production.
