A Joso-country kura near Mito lord Tokugawa Mitsukuni's retirement villa, brewing sake and wine alike.
Hiyama Shuzo was founded in 1820 in Machiya, Hitachiota, Ibaraki — the town famous as home to Seizan-so, the retirement villa of Mito domain lord Tokugawa Mitsukuni. Ringed by the Abukuma mountains and fed by a clear local river, the kura brews its Daiginjo Mitsukuni and its founding-era label Asahi Masamune. For about the last 40 years it has also made Hitachi Wine alongside its sake.
