A Kasama brewery that still works by hand as it did at the start, and stops brewing when the cold does.
Founded in 1868 in Inada, Kasama, Isokura brews much as it did at the outset — by hand, with almost nothing changed. Every batch uses newly harvested rice and is made by kan-jikomi, the traditional cold-season method, which means brewing runs from winter into spring and stops entirely from mid-April to early October. The brewery shop next door, Sakaya Isokura, pours and sells the sake and also carries drinking vessels in local Kasama-yaki pottery.
