A Hitachiota house where a sommelier-trained brewer chases national gold medals with rice grown by neighbors.
Founded in 1880 in Hitachiota, Ibaraki, this brewery is run by a kuramoto-toji — an owner who is also master brewer — whose team includes a brewer with wine sommelier credentials, bringing fresh technique to traditional method. Since 1998, its sake has won 13 gold and 3 additional prizes at Japan's National New Sake Awards. The brewery also works closely with local contract farmers to grow its own rice.
