Takazo Distillery is where Meiri Shurui of Mito restarted craft whisky making in 2022, roughly sixty years after its last run. The company brings a full drinks maker's toolkit to the spirit: yeast developed in-house for its fermentation design, and unusual casks including those seasoned with its famous umeshu.
