Kazuma Shuzo, the Noto-cho brewery behind Chikuha, switched its entire rice supply to Noto-grown in 2020 and brews with mountain spring water — a house committed to sustainable, SDG-minded brewing rooted in its peninsula. Its range runs from unfiltered nama genshu junmai to a green-tea liqueur built on sake. A direct shop is open on weekdays and Saturdays.
