A Wajima brewery built on a legend of a golden gourd, rebuilding after the 2024 Noto earthquake.
In Kawai, the old town center of Wajima on Japan's Noto Peninsula, Hiyoshi Shuzoten traces its founding to 1858. Brewery lore holds that its founder was told in a dream, by a white horse bearing a golden gourd, to begin brewing sake -- a story still tied to the kura's name and its flagship, Kinpyo Shirokoma. The dry, light sake is drawn from well water said to lie closer to the Sea of Japan than any other brewery's. Since the devastating Noto earthquake of January 2024, the brewery has suspended its retail operations.
