The Hakusan house that kept yamahai brewing alive, aiming for sake you never tire of drinking.
Shata Shuzo has brewed Tengumai in Hakusan, Ishikawa since 1823, known above all for its yamahai method — a slower, wild-fermentation style of building the sake's yeast starter. The brewery has kept that hand-crafted approach at its core while also experimenting, as with its sparkling Junmai Daiginjo Awakage. The goal across the range, the brewery says, is sake that never tires the palate at the table. A shop attached to the kura offers tastings.
