In the shadow of Mt. Hakusan, a family brewery built its sake to stand one step behind the food, not in front of it.
Yoshida Sake Brewery has brewed Tedorigawa in Hakusan, Ishikawa since 1870, drawing on the mountain's abundant spring water. The house values close ties with the farmers who grow its rice, and pursues what it calls a table presence 'one step behind the dish' — sake meant to support a meal rather than dominate it. Alongside the core Tedorigawa range sits Yoshidagura u, a newer label aimed at a new generation of drinkers. The brewery does not offer tours, citing a lack of visitor facilities.
