A Kaisei brewery that paused in 1980 and returned in 2018 under the motto 'let's go with reckless abandon.'
Founded in 1865 amid the rice paddies of Kaisei, Kanagawa, Seto Shuzo paused its own brewing in 1980. In 2018 the kura rebuilt its brewhouse and dug a new well, resuming production under the motto "let's go with reckless abandon" (suikyo de ikou). Today this small producer crafts some twenty-two different labels, aiming for sake that resonates with cuisines from anywhere in the world -- including playful bottlings like "Fly Me to the Moon."
