Founded in Saitama in 1808, this brewery's Kyoto branch has blended eastern and western brewing techniques in Fushimi since 1995.
Koyama Honke Shuzo was founded in 1808 in Saitama, and established its Fushimi, Kyoto plant in 1995 to brew with the district's famously soft, prized water. The Fushimi operation focuses on bringing together brewing techniques from both eastern and western Japan in pursuit of a smoother, more rounded style of sake. Its Sekaidaka ("world hawk") label reflects that pursuit, aiming for a soft, full-bodied character distinct from the main Saitama brewery's output.
