Japan's closest sake brewery to the sea, where Kyoto's first female toji turns ancient red rice into a rose-hued sake once served at the G20.
Mukai Shuzo, founded in 1754, is the sole sake brewery in Ine, a fishing town it calls the closest kura to the sea in Japan. Kyoto's first female toji, Kuniko Mukai, oversees an all-junmai kura, including the red sake 'Ine Mankai,' brewed with ancient red rice (akamai) to a rose-like hue. That label was served at the G20 Osaka Summit luncheon.
Junmai — brewed with ancient red rice (akamai), rose-hued
