弥栄鶴
Since 1847 — 京丹後市, Kyoto
A Kyotango kura where three brothers trained by a legendary toji revive the near-extinct Kamenoo rice.
Founded in 1847 as Yukimachi Sake Brewery, the house took its present name, Takeno Shuzo, in 1947 when four local breweries merged. Its sake is now made by three Yukimachi brothers trained under the noted Noto toji Naohiko Noguchi, who favor distinctive, rice-driven flavor — including bottlings from the once-rare Kamenoo variety. The kura also draws inspiration from wine and beer, producing an innovative series designed for pairing beyond traditional Japanese cuisine.
Junmai Ginjo — brewed with the rare heirloom rice Kamenoo, the house's flagship label
Junmai — polished to 70%, rice-forward food-pairing sake
