A Yokkaichi brewery whose 15 registered heritage buildings sit above two wells drawing ultra-soft Suzuka mountain water.
Ishikawa Shuzo has brewed in Yokkaichi, Mie since 1889, and in 2012 its main building and 14 other structures were registered as National Tangible Cultural Properties. Brewing water comes from the Suzuka mountain range as ultra-soft groundwater, drawn from a self-flowing well 200 meters deep and a second well at 76 meters, feeding the two-story wooden kura where its founding label, Fukui, is made. In 2018 the brewery launched Yamaishi, a new junmai-focused line.
