A fifth-generation Yokkaichi brewery that expanded from sake into vinegar, bread and jam.
Ito Shuzo has brewed in Sakura-cho, Yokkaichi, Mie, since 1897, now led by a fifth-generation brewer-owner. Under the idea that "only a small kura can take on this kind of challenge," the brewery has expanded well beyond sake into fermented foods -- sake lees, vinegar, bread, pickles and jam -- alongside its flagship Uzume label. It also runs Bokura, a hands-on visitor space inside a renovated 200-year-old earthen storehouse.
