A Matsusaka brewery founded in 1820 that survived a devastating 2017 fire to resume brewing within the year, cheered on by loyal customers.
Nakayama Shuzo was founded in 1820 in the hills of Matsusaka, Mie, where it makes its flagship sake, Hakumaijo. A fire in February 2017 destroyed most of the brewing hall, koji room, bottling facility and office, but encouragement from longtime customers convinced the family to rebuild — first shipping the aged sake that had survived the blaze, then resuming production of new sake that December. Beyond sake, the kura now also makes sake-lees confiture and sake jelly, playful desserts built around its own brewing byproducts.
