Sendai's last surviving purveyor to the Date clan, still designing sake around the concentration of umami.
Founded in 1688, Katsuyama served as goyougura — official purveyor — to the Date clan that ruled Sendai, and is the only such purveyor brewery still standing in the city. The Izawa family that founded it traces its own lineage to retainers of the Kamakura shogunate. Under the banner "the way of the samurai," the kura designs its sake around calibrated levels of umami, aiming for a match with food rather than sake meant to be judged alone.
