The Shiogama house whose 1965 yeast strain and 1973 label helped invent junmai ginjo as we know it.
Saura has brewed in Shiogama, Miyagi since 1724, serving for nearly three centuries as the official brewery of ritual offerings to Shiogama Shrine, the leading shrine of the old Mutsu province. In 1965 the house isolated what became Association No. 12 yeast — the 'Urakasumi yeast' now used in ginjo brewing nationwide — and in 1973 it released Urakasumi Zen, one of the pioneering labels of the junmai ginjo category. Nanbu toji craftsmanship continues today, aimed at what the brewery calls 'sake with grace': refined, food-friendly, and part of daily life.
