On Hirado's Shishiki Bay, where warm and cold currents meet, sea winds have shaped sake here since 1688.
Fukuda Shuzo has brewed on Shishiki Bay in Hirado, Nagasaki since 1688, in view of the sacred Mount Shishiki. The house motto — sake is made by the heart, and raised by the wind — points to its location where the warm Tsushima Current meets colder currents further north, and sea breezes are said to lend the sake a distinct character. The brewery also works with local farmers to grow its own rice.
