A Hirado brewery named for the island's ancient poetic name, aiming to pass sake craft to the next generation.
Mori Shuzojo was founded in 1895 in Hirado, Nagasaki, trading initially under the name Komatsuya. Its guiding idea is sake brewing that connects and bonds — to the next generation and to the community — and it named its main brand Hiran after an old, romantic name for Hirado itself, meant to express the character of the island. The brewing water comes from a spring at the foot of Saikyoji temple. The house has won gold and silver medals at international sake competitions several times between 2019 and 2022.
