The Story of 潜龍酒造

Senryu Shuzo traces its founding to 1688, when Shozaemon Yamashita, an official of the Hirado domain, was ordered to begin brewing sake at this site in Saikai, Nagasaki. The kura still holds the grounds of the honjin — the official lodging once reserved for the domain's lord — now preserved as a prefecturally designated historic site. For some 300 years the brewery has made its sole label, Honjin, through seasonal brewing that relies on artisans' senses rather than mechanized control, using spring water drawn on-site, local rice and hand-made koji (the mold that saccharifies rice).
