The last sake brewery standing in Imai-cho's Edo-period streetscape, brewing since at least 1772 under the shop name Johinjiya.
In Imai-cho, Kashihara — a district ringed by the Yamato Sanzan mountains and still lined with Edo-period townhouses — Kawai Shuzo is the only sake brewery left standing. Trading under the shop name Johinjiya, records show it was already brewing sake by 1772, and its main residence is now a nationally designated Important Cultural Property. More than 280 years on, the 16th generation now leads the house, still producing the brand Shusseo.
