A Gose brewery chasing sake that "never tires the palate and is never too delicious" — built to improve with age, not just at release.
Founded in 1873 in Gose, Nara, Chiyo Shuzo brews two labels: Shinomine, and a second named for Kushira, the district where the kura stands. The brewery's guiding idea is sake that never tires the drinker and is never merely sweet or showy — bottles built to gain depth and umami as they age, rather than peak immediately. Its Tanbo Label series pushes this further, showcasing a range of Nara-grown rice varieties such as Yamada Nishiki, Isenishiki and Kamenoo.

Junmai Ginjo — Seto Omachi rice, polished to 60%
Junmai — Nara-grown Kamenoo rice, polished to 66%
