A nearly 300-year-old kura in Ikoma, near the reputed birthplace of sake, that switched entirely to junmai in 2005.
Nakamoto Shuzoten has stood in a quiet residential corner of Ikoma, Nara since 1727, rooted in a region often called the birthplace of Japanese sake. For nearly three centuries the kura has honed its craft amid the natural surroundings of the Yamato and Kawachi basins. Since 2005 it has brewed only junmai (pure-rice) sake, guided by a simple motto: "a small kura, but a shining one."
