The last sake house standing in old Settsu, reviving a near-lost heirloom rice after 400 years of brewing history.
Nakao Shuzo was founded in 1869 in Ibaraki, Osaka, though its roots are said to stretch back over 400 years to the Muromachi period. Dozens of breweries once lined the old Settsu region; today Nakao alone keeps that tradition alive. In 1996 it revived Mishima Omachi, a local heirloom sake rice, and still presses its sake the traditional way — using a wooden fune press rather than mechanical methods — to craft its flagship, Ryusen.
