Founded in 1873 at the foot of a mountain in Imari, Saga, Hiwatari Shuzoba draws its brewing water from a nearby spring and has kept to traditional methods ever since. The current, fourth-generation owner favors quality over quantity, keeping production deliberately small so the sake stays consistent. Its flagship label, Marichō, takes its name from Imari's identity as a local sake and evokes the grandeur and unwavering strength of the Great Wall of China — a deep, dignified drink to match the image.
