A 300-year-old Saga house that pioneered flower-yeast brewing, fermenting its entire output with strains cultured from eleven different blossoms.
Amabuki Shuzo was founded around 1688 in Miyaki, Saga, and has brewed for more than three centuries. It pioneered the use of flower yeast, culturing strains from eleven different blossoms — including carnation, strawberry and sunflower — and now ferments its full range of premium sake with them. The kura's buildings, more than a century old, are registered as a National Tangible Cultural Property.
Junmai Daiginjo — brewed with flower yeast, aromatic and floral
Junmai Ginjo — fermented with yeast cultured from strawberry blossoms, sweetly aromatic
Tokubetsu Junmai — spring water from the Sefuri mountains and flower yeast
