Ouroku — 600 koku, six brewers, every bottle kept cold.
Ouroku Shuzo has brewed since the late Edo period — some 170 years — in the Iya district of Higashi-Izumo, Matsue. A toji and five kurabito produce about 600 koku a year, all of it bottle-stored under strict refrigeration, brewing sake fit, as the house puts it, to intoxicate the ancient gods of Izumo. Tours, tastings and retail sales are not offered at any time of year.
