Juji Asahi — kimoto strength brewed in the shadow of Izumo Taisha.
Asahi Shuzo of Izumo (founded 1869) brews Juji Asahi in Imaichi, near the great shrine of Izumo Taisha. The house holds to traditional kimoto brewing, drawing strength from wild lactic bacteria for sake where rice umami and acidity move together. Deputy toji Eriko Terada's wide-ranging experiments have brought fresh attention. A shop is open 10:00–17:00.
