A Matsue castle-town brewery built around pairing sake with the city's fresh, local ingredients.
Yoneda Shuzo has brewed in the castle town of Matsue since 1896. Positioned to complement the fresh, local ingredients the city is known for, its label, Toyonoaki, is brewed as a food-pairing sake meant to be chosen to match whatever is on the table. The brewery continues to pass down traditional techniques handed through the generations while working toward ever higher quality, and it also produces Izumo Jidenshu, a traditional Shimane seasoning sake made from mochi rice.
Junmai Ginjo Namagenshu (unpasteurized, undiluted) — polished to 55%, 100% Shimane Gohyakumangoku rice, 16% alcohol
Tokubetsu Junmai Namagenshu (unpasteurized, undiluted) — polished to 58%, 17% alcohol
