Kashiwazakari — fune-pressed only, on the Senryosui waters of Nikko.
Katayama Shuzo was founded in 1880 by a brewer who left Kashiwazaki in Niigata in search of fine water and found it in Nikko — the Senryosui, subsoil water of the Daiya River. The house presses only in a traditional Sase-style fune, filling each cloth bag by hand and pressing in stages, and limits its Yamada Nishiki to Hyogo's special-A district, with Tochigi's own yeasts. Tours by reservation.
